Preparation Time – 10 minutes
Ingredients
½ kilo organic lean mince beef
1 medium yellow onion – finely chopped
1 medium red onion – finely chopped (not really important)
4-6 cloves of garlic – finely chopped
1-2 tablespoons of olive oil (can fry meat first and then put in onions and garlic with no oil)
2 teaspoons dried herbs
1 teaspoon of paprika
2-4 tablespoons of tomato paste
2 teaspoons of sundried tomato paste (optional great for flavour)
1 t spoon of sugar or 1 grated carrot 0r 1 grated apple
glass of any old red wine
tin of chopped tomatoes
salt and pepper to taste
Cooking time work – 15 minutes
Minimum cooking time – 60 minutes – simmering or in medium oven
Method
Place olive oil in large (iron if you have) pan/wok
Place in chopped onions and gently fry – these can be dry fried on a very low setting)
Add meat and fry until cooked and separate
Add garlic and fry for 1-2 minutes
Add dry herbs and paprika and fry for 2 minutes
Add remaining ingredients – make sure not dry – if dry add a little water.
Cook on simmer for at least an hour. Best left overnight and cooked again for at least half an hour the next day.
Serve with wholewheat spaghetti al dente – rinse with cold water – put into or pour on boiling water.
Strain.
